How is the goodness of Azarò oil born?

From careful attention in olive cultivation, harvesting at the right time, and some of the most innovative milling processes.

All our oil is cold-extracted to preserve the sensory and organoleptic characteristics of EVO oil.

Health has a green color

Recent analyses performed on our two oil varieties show that the quantity of total polyphenols, the natural antioxidants contained in extra virgin olive oil, is very high: 1572 mg/Kg for the Coratina monocultivar and 1100 mg/Kg for the Picholine monocultivar. Demonstrating that quality goes hand in hand with health.

Prima dell’imbottigliamento l’olio viene sottoposto a un processo di filtrazione tramite filtro a cartone, il quale trattiene le particelle d’acqua e le sostanze solide di diversa grandezza molecolare.

Il prodotto ottenuto è un olio in purezza, pulito e in grado di conservare le qualità organolettiche e di gusto.

CORATINA

This is the queen cultivar of Northern Bari, the territory with which it weaves an indissoluble bond.

Its olives are robust and intensely green in color. Coratina oil has a strong personality and an intense, pungent taste, with notes of fresh grass and persistent bitterness.

It is an EVO oil with low acidity and a high quantity of polyphenols: a true health oil! Use it raw to accompany vegetables, salads, hard cheeses or grilled meats and fish.

PICHOLINE

Picholine originates from the Gard region in southern France and is also widespread in Italy, Morocco, and Israel.

Its oil has a color ranging from bright green to light golden. The taste is fruity with medium intensity and floral and herbaceous notes.

Thanks to its balanced and delicate flavor, Picholine EVO oil is versatile in the kitchen, enhancing salads, grilled vegetables, and fish-based dishes.
